Sour Onion - BBQ Special

Ever wondered how those reddish-brownish-orange coloured-or a mixture of all these colours-onion salad served with BBQ at restaurants is made? Its sour, its tangy, its spicy, its sweet to sum up its full of flavor that pairs greatly with that smoky bbq or tandoori food items. But again do you know how to make it..?? NO...
Never mind, now you wont need to say No for this and wish to have that on your table, now you'll be able to make it for your own bbq party or a rich dinner night. All you need is tamarind, vinegar and spices.

2 medium onion
1 cup Tamarind
¼ cup Vinegar
½ cup Water
1 tsp Salt
1 tsp Chat masala
1 tbsp Sugar

Cut the onion set aside. In a pan add all ingredients except onions and cook on low flame for 10 till a medium constituency sauce.

Add onion to the hot tarmarind sauce, mix well and leave for 2-3 hours.

As you can see in the photo the hotness of the sauce will soften the onion and and it will absorb the flavors and juices.
