Falooda | Drink or Desert

Falooda is a popular sweet and cold drink from South Asia. It is made up of many ingredients such as rose syrup, vermicelli, basil seeds, jelly, fruits, nuts along with milk, ice-cream or kulfi. Traditionally, falooda is flavored with rose syrup, but it may be customized as per your taste with other flavors like saffron and cardamom.

Typical falooda has mix fruits but it can be made with one specific flavor fruit i.e. mango, strawberry, banana. Falooda noodles are special type of vermicelli made of arrowroot called used for the drink. but these are difficult to make at home so store bought are best and continent. If not available at super market you can substitute these noodles with plain rice noodles or unflavored egg noodles which are easily available. The falooda can be served as both drink or desert. Fresh milk - 2 cup
Rose syrup - 4 tbsp
Saffron - 1/4 tsp (optional)
Rose water - 2 tbsp
Basil seeds/ Tukh malanga / Tukmaria - 2 tbsp
Falooda noodles - a handful
Almond - 5 to 6
Pistachio - 8 to 10
Cashew-nuts - 3 to 4
Mixed fruits - 1/2 cup
Strawberry jelly pieces - 1/2 cup
Vanilla ice-cream - 4 scoops
Cherries - 2


1. In a bowl mix 1 cup milk and 2 tbsp rose syrup and refrigerate until assembling.
2. In another bowl mix 1 cup warm milk, saffron and rose water. Chill for an hour or more.
3. Soak the basil seeds in 1 cup water for 1 hour or until they have plumped up.
4. Cook the noodles in water until soft or as per the instructions in the packet.
5. Drain and immerse the noodles in the saffron and rose water soaked milk. Refrigerate until assembling.
6. Chop the fruits and nuts into small pieces and set aside.

To assemble the Falooda:

1. Take two tall glasses and put some jelly pieces and top with 2 tbsp of fruits in each glass.
2. Divide the noodles and add to the 2 glasses along with 2 tablespoons of basil seeds.
3. Divide and pour the quarter cup of chilled rose syrup milk into the glasses. Top it with 2 tbsp of fruits.
4. Add 2 scoops of vanilla ice cream and pour the remaining saffron milk and noodles into the glasses. Garnish with chopped nuts and cherries.
